We decided to stop in Beaune on the first day of our trip as it wasn’t as far as going directly to Lyon. Beaune is known as the capital of Burgundy wines. The last time I visited 28 years ago, my wine palette wasn’t developed and I remembered not enjoying any of the wines during our tasting/tours.
I’m still not a fan of burgundy wines, but we did go the Fallot mustard facility for a tour/tasting which was enjoyable. As part of the experience, they gave us our own seeds to grind and mix with the wine vinegar. The fresh ground seeds were spicy like horseradish. Fallot sources all of their mustard seeds and wine vinegar from the area and grinds them in small batches.
We stayed at the Hotel de la Post which was just outside of the old town. Hotel had great air conditioning, and I had reserved parking with they had made a sign for us when we arrived so I knew which space was ours.
